This is a tarte flambée-style eclair with a mousse of nutmeg fromage frais, onion confit and smoked pork belly.

Types of savoury éclairs:

• Mimolette: real Dutch mimolette, sun-dried tomatoes, Modena balsamic vinegar reduction, rocket and poppy seeds – Vegetarian
• Vegetarian: our hummus, grated carrot, sweet pepper, lettuce and linseeds – Vegetarian
• Salmon/Avocado: avocado mousse, smoked salmon, Saint-Moret cream cheese, grapefruit and dill
• Scandinavian: smoked salmon, whipped cheese, cucumber, rocket and sesame seeds
